We recently got an Alligator Chopper thingy for chopping vegetables. It worked great with the onions for Thanksgiving, so I decided to try dicing some green and red peppers for a dinner rice bowl...
The peppers diced up quite nicely. Saved a whole bunch of time slicing and chopping.

I plan on using these diced bits for topping homemade pizza or garnishing various stir-fry dishes I do. Works great for peppers, onions, and slightly frozen mushrooms.
Not quite strong enough for carrots. Baby carrots need a real hard shove.
When I cut up veggies for grilling, I still do those by hand.

I ended up using these peppers and bits with some pepper, salt, chopped onions, garlic, butter, and white wine for a sauce to pour over tortelini.
Came out pretty good.
