Pecan chips

I bought a smoker box to put in the grill tonight, so I soaked some pecan wood chips and fired the thing up...

Damn thing didn't smoke at all. In fact, I used up a lot of charcoal to keep the flames and heat going with this heat-sink in the middle.

Maybe I'll put my coals on one side and this thing on the other, then mingle them up a bit. Or perhaps it's time to get the 22-incher so there's room for all this.

Yet another reason to get the bigger grill:

I still needed to get my own four skewers cooked for dinner.

I guess I wait for some sales during winter before buying the thing.

A few points:

1) Yes, you definitely need the 22-inch Weber if you plan on cooking any kind of quantities of food. Hell, sometimes I run out of room even with the larger grill.

B. Good luck with waiting for a sale on Weber grills. They seldom happen, maybe when a model is being discontinued, but not often. I've been watching for several years, and last month I finally broke down and paid the standing price for the 22-inch One-Touch Gold (I wouldn't get anything smaller or with fewer features than that, either). Also, keep the old grill. It's great for grilling two different dishes at the same time, such as steaks and veggies.

iii> Put the chips directly on the coals, and don't bother with soaking them. Wet chips just douse the fire a bit, and reduce the heat. If you don't hang around with the lid off, they'll stop burning and start smoldering almost immediately after you put the top on. If you need more smoke, add more chips later.

● If you're cooking something with indirect heat (which you should, because that's some goooood eatin'), get the wood chunks to put (again) directly on the coals.

Ω DON'T EVER SETTLE FOR ANYTHING LESS THAN A WEBER! YOU'LL REGRET IT!!!

I guess the metal box was a waste then.

The one-touch seems a bit overkill, though. I don't mind emptying out the ashes myself, even if I forget to put the ashpan on securely from time to time.

All of the Weber kettles cook the same, so if you don't mind the effort necessary to maintain it, don't bother with the One-Touch.

I would point out that you really can't adjust the lower vents on a standard Weber after you light the fire. On the other hand, I can't recall every doing that even with the One-Touch in thirty years of Weber grilling.
